Chicken pie



These small pies can be done in many different versions and can be eaten as a snack or a meal. I'll post different versions of pies in several posts (veggie pies, fish pies etc). This one is filled with chicken, veggies and cheese!

Difficulty level: medium


Ingredients (for 8 pies):

- multi-layered (sfogliatelle) dough for pies (either ready-made or homemade, I am using ready made here)
- 2 eggs
- 200gr mixed melting cheese (I used edam, gouda and mozzarella)
- 1-2 tomatoes
- 4 potatoes
- 1 clove of garlic
- 3-4 spoons of canned corn
- a cube of chicken or veggie broth
- salt
- pepper
- oregano
- paprika
- powdered garlic
- olive oil
- butter
- chicken (either 2 chicken breasts or 3 chicken leg fillets)
- water

How to cook it:
  1. If you're using ready made dough, make sure you've let it defrost for at least a couple of hours before you use it!
  2. I add a bit of salt in a few steps here - you can decide on how much salt you want to use by tasting the food parts each time before you add it. :)
  3. Fill a large cooking pot halfway with water, add chicken broth, a bit of olive oil, salt, pepper, oregano and powdered garlic and let it boil.
  4. Meanwhile, rinse the chicken with water, peel and rinse the potatoes and chop them in large pieces.
  5. Throw them in boiling water and let both chicken and potatoes cook on medium heat. You'll need about half an hour for the potatoes to be ready (they should be soft when tested with a fork), and an hour for the chicken (should be white and well-cooked).
  6. While the chicken and potatoes are boiling, you can prepare the rest of the pie filling
  7. Chop the tomato and the garlic in small pieces, add the corn and mix everything together well. Beat the eggs in a separate bowl. Leave aside.
  8. When the potatoes are done, place them in a bowl and mash them with a fork. Add some oregano, salt and a spoon of butter, and mix well. Leave aside.
  9. When the chicken is done, let it cool a bit, then cut it in small bits. Add paprika and salt and mix well.
  10. Now, on to the pies! Cut the dough in sufficiently large pieces (think about 1,5 palm large each).
  11. Spread layers of ingredients. I added
    • 1st mashed potatoes
    • 2nd veggies
    • 3rd chicken and 
    • 4th cheese
  12. Then add a couple of spoons of the beaten eggs on top of the layers. 
  13. Roll your dough so that both sides meet and button up the pie. 
  14. Apply a tiny bit of olive oil with your fingers or a brush on the upper side of the dough.
  15. Place in oven at 120-150 degrees, for 10-15 minutes each side.
  16. Your pies are ready when the dough is golden-colored and crispy. Ready, sit, eat! :D
