Serbian stuffed peppers



There are just a few people that live in Serbia and had never heard about the traditional Serbian dish called “ Stuffed Peppers”.
My family and I are big fans of them, but I made an advanced recipe just for our taste.
Stuffed peppers are usually cooked in a big pot, with lots of soup, but mine are cooked in fireproof bow in oven. I let them cook first, so to get a nice brown color.



Ingredients for 4 people:
  • 7 large fresh peppers 
  • 0.5 kg of mixed minced meat (beef and pork)
  • cup of rice 
  • clove of garlic
  • small onion 
  • salt and pepper - to taste
  • large tomatoes cut into rings (for closing the stuffed peppers, so pick enough large) 
  • tablespoon of flour 
  • two tablespoons of sour cream
  • 200g hard cheese (as gouda and similar)

Preparation:

  1. Use small pot, and prepare chopped onion and garlic, and after it is cooked put the meat. Put salt and pepper, and leave for five minutes off the stove. In this mix add rice, and mix all together.
  2. Wash peppers and cut middle with seeds in round.
  3. Fill the peppers with this mixture and align them vertically in an oiled baking dish. Cover each pepper with sliced tomato and place in a preheated oven at 200 C degree  to bake.
  4. Peppers will let water out, so you don’t need to add water. 
  5. After about 40 minutes, remove the peppers from the oven and with a big spoon remove the water that is released in a separate bowl. 
  6. In this sauce stir in flour and sour cream. Stir well, cover peppers with it and put it in the oven at 10 minutes again.
  7. After removing the peppers from the oven, put the cheese on the top and let it melt while everything is hot. Once the cheese melts, peppers are ready to serve. Ideally, serve with yogurt or sour cream. Enjoy!

Srpske punjene paprike


Potrebni sastojci za 4 osobe:

  • 7 većih svežih paprika
  • 0,5 kg mlevenog mešanog mesa (juneće i svinjsko)
  • kafena šoljica pirinča
  • čen belog luka
  • manji crni luk
  • so i biber – po želji
  • veći paradajz isečen na kolutove ( koliko paprika imate, toliko kolutova vam treba)
  • supena kašika brašna
  • dve kašike kisele pavlake200g trapista

Priprema:
- U šerpici prodinstati sitno isečen crni i beli luk i zatim dodati meso. Posoliti i pobiberiti i nakon 5 minuta skinuti sa šporeta. U prodinstano meso dodati pirinač i sve dobro promešati. Papriku dobro oprati i iseći sredinu sa semenkama.
- Napuniti paprike sa ovom smesom i poređati ih uspravno u nauljenu vatrostalnu posudu. Svaku papriku poklopiti sa kolutom paradajza i staviti u rernu zagrejanu na 200C da se peče.
- Paprika će sama da pusti vodu, nema potrebe da dolivate. Nakon nekih 40ak minuta, izvadite paprike iz rerne, i kasikom izvadite vodu koju su pustile u posebnu činijicu. U tu vodicu umešajte kašiku brašna i kiselu pavlaku. Dobro promešajte, prelijte paprike sa tim i vratite u rernu na 10ak minuta.
- Nakon vađenja paprike iz rerne, na njih narendajte trapist i pustite da se otopi dok su vruće.
Nakon što se sir otopi, paprike su spremne za serviranje.
Idealno ih je služiti uz kiselo mleko ili kiselu pavlaku.
