Omelet snack

A quick omelet snack that you can eat between lunches, or as a light dinner!

Time you'll need to make this: 10 minutes
Difficulty level: easy!


Ingredients (for 2 portions):

- 2 slices of pita bread
- 1 egg
- ground cheese (I prefer gouda light)
- olive oil
- 6 cherry tomatoes
- salt
- pepper
- oregano
- mayonnaise light


How to cook it:
  1. Slice your cherry tomatoes in thin slices and add salt up to taste.
  2. Pour two spoons of olive oil in a small frying pan and turn on heat.
  3. In a bowl, break the egg, add salt and beat lightly.
  4. Pour beaten egg in heated oil and let it cook.
  5. Add 2-3 spoons of ground cheese as the omelet hardens.
  6. Smear mayo light on your pita bread, and lay the tomato slices, as the omelet cooks.
  7. Remove frying pan from heat, season omelet with oregano and pepper, and split it in two.
  8. Place on top of each pita bread, and start nomming happily in a couple of minutes!
