All time classic fried eggs with potatoes

Because, when you have nothing else at home, eggs and potatoes can always save the day!

Time you'll need to make this: 30 minutes
Difficulty level: easy!


Ingredients (for 1 plate):

- 2 slices of pita bread
- 1-2 eggs
- 3 medium sized potatoes
- olive oil
- 6 cherry tomatoes
- 1 clove of garlic
- salt
- pepper
- sweet paprika
- chili flakes



How to cook it:
  1. Peel, wash and cut your potatoes in thin pieces. Place them in a cooking pan, add salt to taste and a round of olive oil to barely just go over the potatoes (there should not be a layer of oil at the bottom of the cooking pan).
  2. "Fry" your potatoes in the oven, preferably at 150 degrees for 20-30 minutes (until gold and crispy).
  3. Meanwhile, chop the cherry tomatoes in half and grind your garlic.
  4. Place 3-5 spoons of olive oil in a frying pan, and add the tomatoes and the garlic. Let it fry for 1-2 minutes, then break your eggs and let them fry in between the tomatoes garlic. 
  5. Add salt and season with pepper and chilli flakes as it fries. Remove when the eggs are as consistent as you like them to be.
  6. Place your potatoes on an absorbent paper to drain any extra oil, then add to the plate with the eggs and tomatoes, and season the potatoes with pepper and sweet paprika.
  7. Grab your pita bread and nom the hell out of the egg dish :D
