Currrrrrry mustard chicken bites



Here's a chicken with curry version I came up with today! Very fast and easy to do. :) Serve preferably with fresh salad mix, or rice!

Time you'll need to make this: 50 minutes
Difficulty level: easy

Ingredients (for 2 portions):
- 2 chicken  breast fillets
- lemon juice (1 lemon)
- dijon mustard
- salt
- curry powder
- lemon pepper
- powdered onion or half a fresh onion (I use powdered cause it's softer for my stomach)
- whole cumin seeds
- olive oil
- fresh salad mix of your preference





How to cook it:
  1. Cut the chicken in medium-sized bites, and add salt, lemon pepper, lots of curry (depending how strong you want it), the onion (if you use fresh onion then grate it first), 2-3 rounds of olive oil and the lemon juice. Add 4-5 spoons of the mustard, and mix everything very well, creating a thick sauce all over the chicken. Let it be in the marinade for 15-20 minutes.
  2. Heat the oven to 185 degrees, and when ready, spread some cumin seeds on top of the chicken, then cook it for about 45 minutes (check with a fork if it's well done).
  3. Mix the chicken in the salad, and pour over the sauce.
  4. It is highly recommended to dip in the sauce with fresh bread!
