Creamy salmon



Inspired by Maja's very tasty recipe for salmon, I tried to make something similar just with a different sauce, following an idea on the Knorr fish broth carton. Simple as hell, but I promise you it's tasty as hell too!

Time you'll need to make this: 45 minutes
Difficulty level: easy

Ingredients (for 2 portions):
- 2 pieces of salmon fillet
- 8-10 small potatoes
- half a packet of frozen veggie mix (I used corn, red pepper and peas)
- 1 carton (2,5dl) of cooking cream (I use 15% fat)
- 1 fish broth cube
- olive oil
- lemon juice (one lemon)





How to cook it:
  1. Marinate the salmon in a little bit of olive oil (one round is enough, as you'll be using cooking cream afterwards) and the lemon juice. Let it stay in the marinade for 10-15 minutes. Meanwhile heat the oven to 185 degrees.
  2. In a bowl, grate the broth cube and add the cooking cream. Stir very well, and pour over the salmon. The salmon should be bathing in the sauce, as you'll use the sauce after on top of the potatoes.
  3. Peel your potatoes and boil them in water until soft, with a bit of salt. Also boil the veggies with a bit of salt in a different cooking pot. Drain the potatoes and the veggies and leave aside.
  4. Cook the salmon in 185 degrees for 20-25 minutes. When ready, place in the plate along the veggies, and pour the sauce over the salmon and the potatoes.
  5. Drink some white wine for the romance of it :P Eat well!
