Oven potatoes - overall

So I decided to re-write the recipe that I had called "baked potato bites", as this is currently the official and only way I ever make "fried" potatoes - I make them in the oven. Let me make a statement here: I love potatoes. No, I LOVE POTATOES. That's more like it. I make them mashed, boiled, cooked in a sauce, in the oven the traditional way (ie with some water, olive oil and spices, so that they get cooked), and I love, love, love fried potatoes.

But I hate, hate, hate the tons of oil needed to adequately fry potatoes, and I don't own and never want to own a deep fryer. I have posted several recipes with potatoes "fried" in the oven, with lots of different ingredients (peppers, ham, plain etc), but here I'll just write the basic recipe to get really nice potatoes made in the oven and, in time, I'll add all the different spice mixes that I use.

An appropriate photo will be uploaded soon. I had these potatoes today with salmon and spinach, but they disappeared before the thought of writing this hit me :D

Time you'll need to make this: 50 minutes
Difficulty level: easy

Ingredients (for 2 portions):
- 12 small potatoes
- olive oil
- salt


How to cook it:
  1. Warm up your oven to 185 degrees. Meanwhile, peel and rinse the potatoes. Then chop them in "crescent" bites and place them in a bowl.
  2. Pour two rounds of olive oil (absolutely not more than 100ml) and add salt to taste. Mix the potatoes very well.
  3. Lay baking paper on a cooking pan and place the potatoes so that one won't be on top of the other. Place in the oven on the middle scale, and let them for 25-30 minutes at 185 degrees. Then turn the heat up to 200 and bake until crispy outside and soft inside. You can test the softness with a fork - it should find resistance from the crispy skin, but then should pierce the potato easily and feel soft inside. :)
  4. These go perfectly with mayo, or mustard/mayo sauce. Generally with sauces. Lots of them. :D
The following are the spice mixes I have tried (you add them on step 2):
  • Black pepper, powdered onion and dill
  • Sweet paprika, powdered garlic
  • Lemon pepper, oregano
  • Parsley, powdered onion and lemon juice
  • Curry, black pepper and cumin seeds
