Oven potatoes - overall

So I decided to re-write the recipe that I had called "baked potato bites", as this is currently the official and only way I ever make "fried" potatoes - I make them in the oven. Let me make a statement here: I love potatoes. No, I LOVE POTATOES. That's more like it. I make them mashed, boiled, cooked in a sauce, in the oven the traditional way (ie with some water, olive oil and spices, so that they get cooked), and I love, love, love fried potatoes.

But I hate, hate, hate the tons of oil needed to adequately fry potatoes, and I don't own and never want to own a deep fryer. I have posted several recipes with potatoes "fried" in the oven, with lots of different ingredients (peppers, ham, plain etc), but here I'll just write the basic recipe to get really nice potatoes made in the oven and, in time, I'll add all the different spice mixes that I use.

An appropriate photo will be uploaded soon. I had these potatoes today with salmon and spinach, but they disappeared before the thought of writing this hit me :D

Time you'll need to make this: 50 minutes
Difficulty level: easy

Ingredients (for 2 portions):
- 12 small potatoes
- olive oil
- salt

Homemade mashed potatoes - updated

I used to be a manic on mashed potatoes made from dried potato powder. I would literally eat this at least 5 times per week, for like 5 years of my life. Since that time, my cooking has apparently advanced (and became significantly healthier), so nowadays I make homemade mashed potatoes, that taste amazingly (according to other sources as well :D)! Here's my recipe:

Time you'll need to make this: 40 minutes
Difficulty level: easy!

Ingredients (for 2 portions):

-2 big potatoes
- olive oil
- veggie broth cube
- salt
- black pepper
- turmeric
- oregano
- butter
- low fat milk (about 1 small cup - optional)
- low fat melting cheese or parmesan, ground
- a clove of garlic
- water

Happy New Year potatoes

We tried this mix with Henrik for the New Year's table, and we found it too good not to be shared :D So here is another version of the pepper potato snack that I had previously made. This time, we added prosciutto and parmesan and the result was festively delicious! Here's how to do it:

Yahni Potatoes

Yahni (γιαχνί) is a specific way of cooking used in many countries in the Balkans and South Asia, involving boiling with a tomato sauce. In Greece, potatoes are often made this way, whether alone or with meat/fish. This is a recipe to make solely with potatoes, that you can use as a meal or sides to dishes. :) Depending on the potato variety and quality, they can be anything from soft to super-awesome-soft-melting-in-your-mouth after you're done cooking. Slow and long cooking will ensure that your potatoes are as soft and awesome as possible, so patience and checking on your food often is required!

Time you'll need to make this: 1-1,5h

Pepper potato snack

I never thought the combination of potatoes and peppers would be so tasty! Very easy-to-make snack, which can be used as sides as well. Accompany with fine ale for guaranteed pleasure :D This version can be eaten by vegetarians as it only contains cooking cream. For the non-veggies, it's recommended to add ham, bacon, sausage or cooked chicken bits in the mix!
