Thyme lime chicken

Here's a simple and quick recipe for chicken with potatoes. Had some leftover lime juice and thought I should see how it mixes with chicken :)

Time you'll need to make this: 1h & 15 minutes
Difficulty level: easy

Ingredients (for 2 portions):

- 2 chicken breast fillets
- 10 medium-sized potatoes
- one cup lime juice
- salt
- black pepper
- dried thyme
- olive oil
- powdered garlic

How to cook it:
  1. Marinate the chicken in the lime juice, some olive oil (half a cup would be adequate), and salt, pepper, powdered garlic and thyme to taste (I recommend you to be generous with the amounts you'll use). Leave it in the marinade for about 15 minutes.
  2. Meanwhile, wash the potatoes well and keep the skin on. Cut them in medium bites, add a round of olive oil, salt, pepper and powdered garlic, and mix them well.
  3. Heat your oven to 185 degrees, and add the chicken, the potatoes and the marinade in a baking pan. Make sure that you pour the marinade over the potatoes as well. Place in the oven for about an hour, or until the potatoes are soft when pierced by a fork, and the chicken well cooked inside.
  4. Served super-best with mayonnaise or mayo sauce on the side, and white wine!
