Penne with veggies


I retried my pasta with veggies recipe and it turned out more interesting this time, so I am updating it here, for all the veggie lovers that want ways to introduce greenies in their pasta sauces. This recipe is done with whole-wheat pasta and cooking cream light, so it's a good option for keeping weight control :)

Time you'll need to make this: 30 minutes
Difficulty level: easy!


Ingredients (for 2 plates):

- half a packet of whole-wheat penne
- 14 cherry tomatoes
- 2 green peppers
- 2 long, sweet, red peppers
- 2 cloves of garlic
- salt
- black pepper
- oregano
- olive oil
- a packet of cooking cream light
- a shot of white wine (optional)
- a whole bottle of white wine (also optional :P)


How to cook it:
  1. Fill a cooking pan with water and add a spoon of salt, some oregano and olive oil. Let it boil, then throw in your pasta, stir well and let in cook (should take around 10 minutes).
  2. Meanwhile chop your veggies in small pieces and grind your garlic.
  3. Add some olive oil (about 4 spoons) in a frying pan, and fry your garlic and veggies for about 5 minutes, stirring well and adding salt, pepper and a little bit of oregano. If you are to use wine, you can add it here, and cook for another 2-3 minutes.
  4. Add the cooking cream in the mix, and put the heat to low. Stir around for a few minutes, and let it cook for another 10 minutes or so. Remove the sauce from the heat, and let it rest for 2-3 minutes.
  5. Add the sauce to the pasta and stir everything well. If you haven't used the wine during cooking, I oblige you to drink at least a glass with this pasta plate :D Cheers!
