I retried my pasta with veggies recipe and it turned out more interesting this time, so I am updating it here, for all the veggie lovers that want ways to introduce greenies in their pasta sauces. This recipe is done with whole-wheat pasta and cooking cream light, so it's a good option for keeping weight control :)
Time you'll need to make this: 30 minutes
Difficulty level: easy!
Ingredients (for 2 plates):
- half a packet of whole-wheat penne
- 14 cherry tomatoes
- 2 green peppers
- 2 long, sweet, red peppers
- 2 cloves of garlic
- salt
- black pepper
- oregano
- olive oil
- a packet of cooking cream light
- a shot of white wine (optional)
- a whole bottle of white wine (also optional :P)
How to cook it:

How to cook it:
- Fill a cooking pan with water and add a spoon of salt, some oregano and olive oil. Let it boil, then throw in your pasta, stir well and let in cook (should take around 10 minutes).
- Meanwhile chop your veggies in small pieces and grind your garlic.
- Add some olive oil (about 4 spoons) in a frying pan, and fry your garlic and veggies for about 5 minutes, stirring well and adding salt, pepper and a little bit of oregano. If you are to use wine, you can add it here, and cook for another 2-3 minutes.
- Add the cooking cream in the mix, and put the heat to low. Stir around for a few minutes, and let it cook for another 10 minutes or so. Remove the sauce from the heat, and let it rest for 2-3 minutes.
- Add the sauce to the pasta and stir everything well. If you haven't used the wine during cooking, I oblige you to drink at least a glass with this pasta plate :D Cheers!
