Pita souvlaki

Before I moved to Sweden, I already knew that I would not be able to find a specific pita wrap we make in Greece, called "pita souvlaki", or "souvlaki", depending on where you live in Greece. Other countries seem to offer the alternatives of "gyro" and "gyro wraps" or "kebab" or plain souvlaki without the pita. As by request of all friends abroad who have visited Greece and loved pita souvlaki as much as Greeks do, and because I can't live without this, here is my recipe for pita souvlaki!

Ingredients (for 2 wraps):

-2 slices of pita bread - in Sweden, I buy something very similar called "Polarkaka Original". You will most certainly be able to find pita bread (or something very close to it) at a big store. I will post a recipe for homemade pita bread in the future, once I get to experiment on it.
- 2-3 chicken leg fillets. Alternatively, pork meat or soy meat (vegetarian version) can be used.
- one plate of any type of potatoes you fancy - for this time, I used frozen, chopped potatoes and had them done in the oven, because pita souvlaki is supposed to be a "fast food", and you shouldn't need to spend too much time preparing it, but I would recommend homemade potatoes, if you have the time to do it. You can use this recipe of baked potatoes, but remove the skin and cut them longer and thinner instead.
- salt
- pepper
- grill spices mix
- powdered garlic
- oregano
- olive oil
- mustard
- mayo (not light, just this once!)
- curry
- one tomato (optional)
- one onion (red or yellow, according to your preference, optional)
- baking sheets (4)



For my souvlaki, I use a mustard-mayo sauce, but people can also request tzatziki sauce, so I'm posting a recipe from my mom for the sake of the lovers of bad breath :P This might be separately posted as a sauce, later on, when it has been tasted and approved by Henrik :D

For tzatziki sauce:

- Greek yoghurt (200g)
- 3 big cloves of garlic
- olive oil (100ml)
-  vinegar (1 tbsp)
- one cucumber
- salt
- pepper
  • Peel and grate the cucumber into thick pieces, then drain it well from leftover juices. 
  • Grate the garlic and add it to the cucumber.
  • Add the yoghurt, vinegar, salt and pepper to taste and the olive oil, and mix very well.

How to make it:
  1. Warm up your oven to 175 degrees. Meanwhile prepare the chicken with salt and pepper to taste, some grill spices mix and powdered garlic. Add 5-6 spoons of olive oil and mix everything very well. Place in the oven and cook for about 45 minutes, or until meat is well cooked (can take 15 minutes more or less, depending on your oven).
  2. Remove the meat, chop it in smaller bites and leave aside covered, to keep it warm. Turn the heat to 200 and spread the potatoes on a baking sheet, add salt and pepper to taste, and let them get nicely done in the oven. Should take about 20 minutes to have them ready and done.
  3. While the potatoes are being prepared, place three spoons of mayo in a bowl, and add one teaspoon of mustard, salt and pepper to taste, a little bit of oregano, powdered garlic and some curry, and a spoon of olive oil. Mix very well. My advice is to go slow with the spices and add up as you keep tasting the sauce while mixing, up to the point that the taste is good enough for you. Remember that the chicken is also spiced, so it's best if you don't overdo it. :)
  4. If you're using tomatoes and onions, it's a good moment to slice them in thin pieces and keep them aside.
  5. When the potatoes are ready, place them aside, and very briefly heat the pita bread in the oven. It has to be warm, but not crispy - soft enough to be used as a wrap. Lay the pita bread on a plate, and spread the sauce all around. Then add meat and potatoes (plus any other stuff you might want to use), starting from the middle, and up until the pita can be wrapped around the ingredients. 
  6. Lay the pita souvlaki on the side of a baking sheet, and wrap it. Fold the bottom so that your ingredients don't fall off. Nom happily! Recommended with a cold beer on the side!
