Quick sponge cake

This is a basic sponge cake recipe that you can easily find on the Internet, but I made a couple of changes and additions :) The result is a normally sweet (not too sweet, not too bland) and it can go well with breakfast or coffee break!

Time you'll need to make this: 60 minutes
Difficulty level: easy!

Ingredients (for 8 pieces):

- 6 eggs
- 1 cup of cake (self-rising) flour (my cup = 20 spoons)
- 1 cup of brown sugar
- 3 spoons of drinking chocolate powder or cocoa powder
- 1 spoon of ground coconut
- icing of your preference (I used apricot jam with no added sugar - just natural fruit sugars)
- a bit of butter

How to make it:
  1. Separate the yolks from the whites and place in different bowls. Split the sugar in the two bowls and beat well, then mix those two together.
  2. Gradually add the flour, and mix everything well until you have a uniformed mixture.
  3. Add the chocolate powder and the coconut and mix well again.
  4. Butter up a cooking pan, and pour in your mix. Let it bake at 175-180 degrees for 30-40 minutes or until dry when you test it with a toothpick or a knife. My cake came out quite flat since my pan was too big for this amount of mixture. The height of your cake will mostly depend on your pan and how much mixture you make. :)
  5. Once the cake is cooled, you can ice it with whatever you like. I have left it without icing, so that I can try different things with each slice. In the photo, it's the apricot jam on top, but you can try nutella, tahini with cocoa, powdered sugar, whipped cream with fruits and whatnot!
