Happy New Year potatoes


We tried this mix with Henrik for the New Year's table, and we found it too good not to be shared :D So here is another version of the pepper potato snack that I had previously made. This time, we added prosciutto and parmesan and the result was festively delicious! Here's how to do it:

Time you'll need to make this: 40 minutes
Difficulty level: easy!



Ingredients (for 2 portions):

- 4-5 medium sized potatoes
- 2 sweet red peppers
- salt
- black pepper
- 50gr grated parmesan
- a packet of prosciutto (about 5 slices)
- olive oil
- cooking cream light


How to cook it:
  1. Peel, wash and cut your potatoes in thin, preferably wide pieces. Place them in a cooking pan, add salt and pepper to taste and a round of olive oil to barely just go over the potatoes (there should not be a layer of oil at the bottom of the cooking pan).
  2. Cook your potatoes in the oven, preferably at 170 degrees for 30 minutes. You're going for a more baked sensation, so they don't need to be crispy. Check often for the perfect potato cooking, as it differs depending on the kind of the potato.
  3. Meanwhile, chop your peppers in small pieces and your prosciutto in long, thin stripes.
  4. When your potatoes are ready, remove the pan, and add in the peppers and prosciutto. Stir around, then sprinkle with your parmesan so that it goes all over the pan.
  5. Add cooking cream on top (needs about one third of a carton), and get the cooking pan back in the oven for another 10 minutes at about 130 degrees. Check for the parmesan, and when it's melted, it's ready!
  6. Eat preferably warm (we tasted it cold also and it was still good to go!), with a festive mood :D Goes nicely as sides with everything in a meal or a big table, and also as a standalone snack with drinks and beers!
