Lentil soup


Lentil soup is a very healthy and quite tasty option in your everyday meal selections!

Time you'll need to make this: 45 minutes
Difficulty level: easy!


Ingredients (for 2 plates):

- half a pack of lentils (thin type)
- half a carton of tomato juice
- 1 tomato
- olive oil
- salt
- paprika
- 2-3 leaves of laurel
- 1-2 cloves of garlic
- vinegar
- water


How to cook it:
  1. Fill a cooking pot with water and throw in the lentils. Place on high heat.
  2. Chop the tomato in small pieces and leave aside.
  3. When the lentils start boiling, remove the cooking pot from the heat, drain them and refill the cooking pot with water till the top.
  4. Add garlic, laurel, salt and paprika, and the tomato pieces. Stir well and let it boil for about 30 minutes, until the lentils become soft.
  5. Lower the heat to medium and add the tomato juice and a bit of olive oil (no more than 3-4 spoons). Let it cook for another 10 minutes.
  6. Your lentil soup is ready! Add some vinegar and enjoy. Goes perfectly with black olive oils or bread with olive paste!

  1. May I suggest a variation?
    Instead of vinegar, you can add lemon juice at the last step.
