Another version of salmon with veggies, for all the lovers of fish and vegetables out there! :D With dressing by Henrik :)
Time you'll need to make this: 40 minutes
Difficulty level: easy
Ingredients (for 2 portions):
- 4 salmon fillets
- 500g baby spinach
- 2 tomatoes
- 300g frozen veggies (I picked green peas and carrots)
- olive oil
- salt
- lemon pepper
- oregano
- some fresh dill
- mayo
- lemon juice

Ingredients (for 2 portions):
- 4 salmon fillets
- 500g baby spinach
- 2 tomatoes
- 300g frozen veggies (I picked green peas and carrots)
- olive oil
- salt
- lemon pepper
- oregano
- some fresh dill
- mayo
- lemon juice
How to cook it:
- Heat your oven to 180. Place the salmon in a cooking pan, add a round of olive oil, salt, lemon pepper and oregano to taste, both sides. Place in the oven for 30 minutes.
- Meanwhile boil the frozen veggies in plain water, drain them, and cut the tomatoes in bits.
- Prepare the dressing using mayo as base, and adding a bit of olive oil, salt, lemon pepper, oregano, fresh dill and lemon juice to taste. Mix everything well. I go for a mildly runny dressing so that it will be spread nicely over the rest of the ingredients :)
- When the salmon is ready, cut it in small bits.
- Place the spinach and the tomato at the bottom of the plate, and add dressing to the layer. Add the salmon, and a second round of dressing. Then add the boiled veggies, and add the rest of the dressing on top. Nom your healthy meal very happily!
- Perfect with rose or white wine! <3
