Ingredients: (for 40-50 Raffaello balls)
- 100ml condensed milk
- 100g unsalted butter
- 300g coconut flour (shredded coconut)
- 100g cream cheese (like Philadelphia)
- 4 tea spoons honey
- 100g almonds
- 50g Rice Krispies or Cheerios-grounded in food processor
- 300g white chocolate*melted
Preparation:
- Warm up butter with condensed milk on low heat. Add 100g of shredded coconut, stir well and leave it to cold.
- When it's cold, add cream cheese, honey and mix well. Leave your Raffaello mixture it in the fridge to cold for 30 minutes.
- After time in the fridge, take your pot out and start making balls.
- Take one almond, and little Raffaello mixture (dubble in almond size-Raffaello balls are better when they are smaller, latter when you add chocolate, and other layers, they will grow in size, so better make them small at the beginning) make a ball with almond inside.
- You will repeat making balls till you use all Raffaello mixture that you have. You should get 40-50 balls at the end. It depends how big/small you make them, but I suggest smaller as you can.
- After you make all balls, you have to roll them in ground krispies. Do it well, so whole Raffaello ball will be covered with krispies.
- On the last stage, first, melt chocolate and roll each ball in it, then roll in shredded coconut and place in the refrigerator for 30 minutes.
- Place Raffaello balls in paper molds and share with your friends and family. Keep them in the fridge and take them out around 30-45 minutes before serving.
