Red fish soup





This is a traditional dish of Lefkada.
You will need a big fish (such as mullet fish
or any other similar fish) for this recipe,
because small ones might get lost in
the pot during the boiling process.















Materials:

1 or 2 kg of our fish, cut in portions

5 potatoes  -  4 ripe tomatoes  -  1 onion  - fresh parsley  -  4 spoons olive oil  -  salt & pepper


  1. First we clean the fish from its scales and guts, and wash it well.
  2. Peel the onion and the tomatoes and place them in a medium pot with plenty of water to boil.
    You will need enough water to cover the fish and the potatoes that you will add later.
  3. Add a bit salt and the chopped parsley, and let it boil for about half an hour.
  4. After it has boiled, squeeze the onion and the tomatoes, to release all of their juices.
    This will give the soup more color and thickness.
  5. Then use a strainer to remove the onion & tomato pulp & the parsley from the water, we don't need them anymore.
  6. Add the potatoes and let them boil for 15-20 min.
  7. Add the olive oil, the pepper and after you cut the fish into portions (for example in 2-3 pieces, depending on its lenght) add it to the pot. Add more salt if you think it's needed.
    It should be ready in 10-15 min.
  8. Carefully remove the fish from the pot (we don't want it to fall in again) and place it in a big plate.
  9. Serve potatoes & broth* in deep plates of bowls, and let everyone take the fish portion they like.
  10. Dinner is served!!!


*Don't forget to dip bread in the broth, it's very tasty**.
