I tried an adaptation from a recipe from http://www.kronfagel.se/ that I found on a bag of chicken leg fillets. Smells great, tastes great (for me) and it's kind of a protein bomb :) You can make a longer, more-homemade version if you don't want to use any canned products, which I refer to right after the recipe.
Time you'll need to make this: 60 minutes
Difficulty level: easy
Ingredients (for 2 portions):
- 400gr chicken leg fillet
- 1 can of white beans in tomato sauce
- 1 cup of crushed tomatoes
- 1 chicken broth cube
- olive oil
- grill spices mix
- salt
- pepper
- powdered garlic
- powdered onion
- dried thyme
How to cook it:
For your own beans instead of canned ones, you can buy white beans and let them soak overnight, then boil them with some salt. Afterwards, drain the beans of any remaining water, add a carton of tomato sauce, salt to taste, a veggie broth cube and half a teaspoon of sugar in the cooking pot together with the beans, stir well and let it cook in low heat for 15-20 minutes.

- Warm up your oven to 185 degrees. Meanwhile, place the chicken in a cooking pan, add two rounds of olive oil, and spice it up with the garlic, the onion, some grill mix, and a little salt and pepper. Place the chicken in the oven when ready, and let it cook for about 40 minutes (or until ready, ie well cooked inside if you stick a knife in it).
- When done, cut the fillets in small pieces and add them to a cooking pot. Add the beans with their sauce, the chicken broth cube, the crushed tomatoes and stir everything very well. Let it cook in low heat for 5 minutes.
- Taste your mix and, depending on how you like it better, add more salt, garlic and/or onion. Don't forget to add a spoon of dried thyme! Stir very well, and let it cook for another 10 minutes in low heat.
- Serve warm, preferably with bread to dip in the sauce! You can also serve this with mashed potatoes, baked potatoes or rice as sides.
