Gingerbread cookies // Pepparkakor

Ginger biscuits are flavored with powdered ginger and a variety of other spices like clove, cinnamon and cardamom. In Scandinavian countries this is traditional Christmas cookie that can be baked at home as well as purchased from the stores. Sweet and spicy taste with crispy texture perfect with both tea and coffee or just a cup of warm milk.

INGREDIENTS: {for 300 cookies}
  • 300g butter
  •  4 dl of sugar
  • 1 dl of honey
  •  2 dl of water
  • 2 tbs ground cinnamon
  • 1 tbs ground ginger
  •  2 tbs ground cardamom
  • 1 tbs ground clove
  •  15 dl of flour
  • 1 tbs baking powder
Preparation:

  1.  Melt the butter gently, add sugar, honey, water and spices into it and stir well.
  2.  Mix the flour with baking powder.
  3.  Pour melted butter mixture into flour and mix it well until becomes nice and smooth dough.
  4.  Divide the dough into few pieces and place them in the plastic bags and leave in the refrigerator for one day. In emergency case :)you can leave it for only 1-2 hours.
  5.  Next day, take it out from refrigerator 30 minutes before baking, roll the dough on the working surface 2-3 mm thick and cut with favorite mold.
  6.  Place it on the baking paper and bake for 5-6 minutes on 200 C degree (or, maybe shorter till cookies get nice brown color).
